Ingredients

  • 6 apples
  • 4 tablespoon jam
  • 3 tablespoon rum
  • 1 handful raisins
  • 1 handful walnuts, ground
  • 250 grams sugar
  • 200 ml milk
  • 8 egg (s), separated
  • 8 tablespoon water, cold
  • 16 tablespoon flour
  • 1 packet baking powder
  • some whipped cream

Instructions

  1. Peel the apples, remove the core. Mix the jam, rum, raisins, ground or whole walnuts and pour the mixture into the apples.
  2. Let the sugar caramelize in an ovenproof dish and swivel the dish so that the caramel sits on both the bottom and the walls of the dish. Put in the apples and pour 200 ml of milk with a little rum or rum essence (optional) over them. Bake at 200 degrees for about 25-30 minutes so that the apples become soft. Lower the oven to 150-180 degrees.
  3. Beat 8 egg whites until stiff, 8 tablespoons sugar, 8 tablespoons cold water, 8 egg yolks carefully add and mix, 16 tablespoons flour with 1 packet of baking powder sift over it, carefully stir in. Pour the batter mixture over the apples, bake for another 40 minutes until the batter has turned golden (do a toothpick test).
  4. Turn upside down on a large, round plate (dough below, apples above), let cool, garnish with freshly whipped cream.
