Cheesecake with Oranges

Homemade curd cheesecake garnished with oranges.

Oranges are available all year round and this can and should be taken advantage of. For example, I like to decorate cheesecakes with fruits, this time I got such a handsome cheesecake with orange circles.

Ingredients

For the top:

  • Large orange – 1 pc.
  • White sugar – 1 glass
  • Fresh lemon juice – 2 teaspoon

For the cake:

  • Cracker or other unsweetened biscuits (crumbled) – 1 1/4 cups
  • Butter (melted) – 3 tbsp
  • Cream cheese – 670 g
  • White sugar – 3/4 cup
  • Eggs at room temperature – 4 pcs.
  • Flour – 2 tbsp
  • Sour cream – 1/2 cup
  • Orange liqueur – 1 tbsp
  • Fresh orange juice – 3 tbsp

Directions

  1. First, you need to prepare the top for the cheesecake. Cut the orange into thin slices. Pour 3/4 cup water and lemon juice into a deep saucepan and add sugar. Place a saucepan over medium-high heat and cook, stirring occasionally, until the sugar is completely dissolved. Put the orange circles in the syrup in one layer and bring the mixture to a boil. Cover the pot with a lid and simmer for about 5 minutes. Remove the lid and cook until a thick syrup forms, about 20 minutes. Remove the pot from the stove and let the syrup cool at room temperature for about 15-20 minutes.
  2. In the meantime, prepare your cheesecake. Turn on the oven to preheat to 150 degrees. Pour the crumbled cracker into an ovenproof dish, about 25 cm in diameter, pour melted butter there, and mix well. Use your fingers to press down the mass to the edges and bottom of the mold to make a cake with sides about 1.5 cm high.
  3. Put cream cheese in a large bowl and add sugar, beat well with a mixer at medium speed. Then add eggs one at a time, beating well after each. After all the eggs are mixed in, you need to add flour, pour sour cream and liqueur, mix well and pour the resulting mass into the prepared cake.
  4. Put the form with the future product in a preheated oven and bake for about 60-70 minutes. Remove the finished cheesecake from the oven and leave at room temperature until completely cooled. Then cover the cheesecake with cling film and refrigerate for at least 3 hours.
  5. Remove the chilled cheesecake from the refrigerator, release it from the mold, and put the orange circles on top.
  6. Put the orange syrup on the stove and heat over high heat until golden brown, for about 3-4 minutes. Remove the pan of syrup from the stove and pour the orange juice into it. Allow to cool at room temperature, and then brush the cheesecake with the resulting concentrated syrup.
