Cold Soup with Kefir

This is a lighter version of a cold soup. When you want to arrange a fasting day for yourself, but without the risk of falling into a hungry swoon!

Servings: 2
Ingredients
- Boiled potatoes – 1 pc.
- Small tomato – 1 pc.
- Green onions with onion – 1-2 pcs.
- Small fresh cucumber – 1 pc.
- Pickled cucumber (salted) – 1 pc.
- Parsley
- Capers – 2 tablespoons
- Boiled eggs – 2 pcs.
- Pickled cheese – 50 g
- Skim kefir – 200 ml
- Water – 100 ml
- Salt
- Pepper
How to make cold kefir soup:
Directions
- Grate potatoes and cheese on a coarse grater, chop parsley.
- Cut the onion into rings.
- Cut the tomato into small cubes.
- Cut the cucumbers into small cubes too.
- Grind the boiled egg.
- Mix all ingredients and add capers. Check for salt, pepper.
- Dilute kefir with water to the desired consistency. Pour the soup. Cold kefir soup is ready.
