Cookies with Nuts and Cranberries

Delicious shortbread and curd biscuits with walnuts and dried cranberries are a great treat for any holiday or for every day. Spices such as cardamom and ginger are added to the filling for the cookies, so the cookies are perfect for the Christmas holidays.

Ingredients

  • Cottage cheese – 120 g
  • Butter (cold) – 100 g
  • Yolk – 1 pc.
  • Flour – 180 g
  • Sugar – 4 tbsp
  • Salt – 1 pinch
  • Baking powder – 1/4 teaspoon
  • Vanillin – 1 pinch
  • Dried cranberries – 100 g
  • Walnuts – 50 g
  • Ground ginger – 1/2 teaspoon
  • Ground cardamom – 1/2 teaspoon

Directions

  1. For the filling, you need to grind dried cranberries, walnuts and 1 tablespoon in a blender. a spoonful of sugar.
  2. Add ginger and cardamom to the ground mixture to make the cookies spicy and aromatic.
  3. For the dough, first combine flour, salt, baking powder and vanillin.
  4. Also for the dough, mix cottage cheese, yolk and 3 tablespoon. tablespoons of sugar. (If you want the dough not to contain grains of cottage cheese, then the cottage cheese should first be wiped through a sieve, but this is not necessary.)
  5. This curd dough is prepared according to the principle of shortbread, so the butter must be cold. Cut the butter into pieces and quickly grind with the flour mixture, turning everything into crumbs. The oil should not melt.
  6. Add the curd mass to the resulting crumb and mix quickly. Then we wrap the shortcrust-curd dough with cling film and leave in the refrigerator for 20 minutes.
  7. After that, roll out the dough into a rectangle and evenly spread the filling on it. Roll the stuffed dough into a roll.
    (At this point, the semi-finished product can be wrapped in foil and frozen. On the day you plan to bake cookies, just take the roll out of the freezer and defrost it slightly, but so that the roll is firm, so it is more convenient to cut it.)
  8. Cut the curd dough roll with nuts and cranberries into rolls about 1 centimeter thick. We spread the future cookies on a baking sheet covered with parchment and put the baking sheet in the oven. Preheat the oven in advance to 180 degrees.
  9. We bake shortbread cottage cheese cookies with filling until slightly golden brown (about 20 minutes); make sure that it does not burn from the bottom. Remove the baking sheet from the oven and remove the curd biscuits from the parchment.
  10. Let the fragrant cottage cheese liver with nuts and cranberries cool before drinking tea with it.
