Cottage Cheese Cookies with Sugar and Cinnamon

These incredible curd cookies will win you over with one bite! Soft and crumbly cinnamon-filled “pads” are incredible! It is noteworthy that the curd dough for this cookie is unsweetened, and sugar is added only to the filling.

Servings: 3

Ingredients

  • Cottage cheese (fatty) – 250 g
  • Butter (softened) – 80 g
  • Flour – 160 g (1 glass with a capacity of 250 ml)
  • Baking powder – 1 teaspoon
  • Salt – 1 pinch

For filling:

  • Sugar – 3 tbsp
  • Ground cinnamon – 2 teaspoon

Directions

  1. Transfer the soft butter and curd to a bowl.
  2. Rub the cottage cheese and butter with a spoon.
  3. Mix flour with baking powder and a pinch of salt and sift into a bowl with curd mass.
  4. Knead the dough, which should hold its shape, not stick to your hands, but still be soft enough. You may need a little more flour or a little less, depending on the moisture content of the cottage cheese. Turn on the oven to heat up to 180 degrees.
  5. Divide the dough in two. Roll one part of the dough into a long rectangular layer about 0.5 cm thick.
  6. Mix sugar with ground cinnamon.
  7. Sprinkle the rolled dough with half the cinnamon-sugar mixture.
  8. Roll along, tight roll.
  9. Cut the resulting roll across into 8 mini rolls. Do the same for the second slice of dough and the remaining cinnamon-sugar dusting. There are 16 cookies in total.
  10. Line a baking sheet with baking parchment. Place the prepared items seam side down on a baking sheet. Bake curd cookies in an oven preheated to 180 degrees for about 25-30 minutes.
  11. The cottage cheese cookies with sugar and cinnamon are ready.
  12. Transfer the cookies to a plate and let cool.
