Ingredients

  • 150 g mascarpone
  • 100 ml coconut milk
  • 1 medium tomato (s)
  • 1 handful leeks, finely chopped
  • 250 g shrimp
  • 0.5 ½ cup white wine
  • 1 teaspoon vegetable stock, grained
  • 0.5 clove ½ garlic
  • 1 pinch (s) salt
  • 1 splash lime juice

Instructions

  1. Peel and squeeze the garlic and fry it with the chopped leek. Dice the tomato and add it, deglaze with the white wine. Bring everything to the boil, then stir in the granulated stock, coconut milk and mascarpone.
  2. Then add the shrimp and simmer everything over a low heat for 4 - 5 minutes. Season to taste with salt and lime juice.
