Creamy Curd Dessert with Chocolate and Coffee

A curd-creamy dessert with an appetizing coffee-chocolate flavor is a godsend for cases when you want to pamper yourself with a light and tasty delicacy. The base of cottage cheese and cream add satiety and creamy notes to the dessert, the addition of gelatin – the most delicate texture reminiscent of mousse, and instant coffee, dark chocolate, and honey – sweetness and a very tempting taste. Pamper yourself and your loved ones!

Ingredients

  • Cottage cheese – 500 g
  • Cream, 10% fat – 100 ml
  • Black chocolate (56%) – 60 g (+ 20-30 g for decoration)
  • Instant coffee – 1.5 teaspoon
  • Honey – 80-120 g (to taste)
  • Instant gelatin – 15 g
  • Boiled chilled water – 200 ml

Directions

  1. Pour the instant gelatin into a saucepan or small saucepan. Cover the gelatin with cold water and let sit for 15 minutes.
  2. Break the chocolate into small pieces. When the gelatin has swollen, add the cream and chocolate to the saucepan.
  3. On low heat, stirring occasionally, heat the mixture until the gelatin and chocolate dissolve, without bringing to a boil. Turn off the heat and add instant coffee.
  4. Mix everything well.
  5. Combine cottage cheese and 80 g of honey in a bowl with high sides.
  6. Pour a mixture of cream, chocolate, coffee, and gelatin into the curd with honey in a thin stream. Whisk the mixture for 3-4 minutes, until smooth. Taste the mass and add more honey if necessary, adjusting the sweetness of the dessert to your liking. Whisk for 1-2 minutes to dissolve the honey. I had a slightly sour curd, so I added another 40 g of honey to balance the taste.
  7. Pour the mixture into single portions. Cool the dessert to room temperature and place in the refrigerator for another 3-4 hours for final cooling and complete stabilization.
