If there is a closed bag of kefir in the refrigerator, and you no longer have the strength to drink it, then you can make a light “curd” from it.
Put the bag in the freezer in the morning, and in the evening cut it and fold it onto a fine sieve or cheesecloth. By the morning, you will get a tender sour cream mass, very light in comparison with sour cream. And very inexpensive compared to purchased cottage cheese. 🙂 And for complete happiness, we do this. Put finely crushed cookies in a glass. (An even lower-calorie option is oatmeal.) Top – chopped prunes, then part of the “curd”.
And we alternate the yogurt curd with prunes and cookies until the ingredients run out.
