Delicious and delicate curd roll is so soft that it just melts in your mouth. The aroma of chocolate, banana and walnuts goes well with soft curd. The preparation of such a roll is also original – its dough is baked simultaneously with the filling.
Ingredients
Ricotta cottage cheese (or soft cottage cheese) – 400 g
Flour – 90 g
Starch – 90 g
Banana – 175 g (1 pc.)
Eggs – 3 pcs.
Sugar – 150 g
Chocolate – 25 g
Walnut Kernels – 50 g
Milk – 1 tbsp
Baking powder – 2/3 teaspoon
Salt – a small pinch
Vanillin – a small pinch
Butter (or vegetable) – 20 g
Powdered sugar – for dusting
Directions
We prepare products for the curd roll.
The kernels need to be minced, but not very finely. We leave some of the nuts to decorate the roll
Knead the banana with a fork until puree.
Separate the whites of the two eggs from the yolks. Combine two yolks with 1 tablespoon. l. sugar (25 g).
Beat the egg yolks with sugar until a thick white mass.
Pour the yolks into a bowl, add mashed banana, flour, starch, nut kernels, baking powder, a pinch of salt and vanillin. We mix everything.
In another dish, combine proteins with 1 tbsp (25 grams) sugar.
Beat whites with sugar until stable peaks.
Add the proteins to the bowl to the rest of the ingredients.
Gently mix everything together with proteins.
In another bowl, add the egg, 100 g of sugar and milk to the curd cheese. Its density may differ from different producers of cottage cheese. If the curd is too soft, you need to reduce the amount of milk or not add it at all so that the filling does not turn out to be liquid. I added 1 tbsp milk (15 ml).
We mix everything so that the sugar is completely dissolved.
To bake the roll, you will need a baking sheet with dimensions of 25 by 35 cm. Cover the baking sheet with parchment, which we grease with butter or vegetable oil. Then spread the filling in an even layer.
Pour the dough on top of the filling.
We also spread the dough in an even layer.
We put the roll in the oven and bake at 180 degrees for about 20 minutes.
Take the finished roll in parchment out of the baking sheet.
Sprinkle another sheet of parchment or a towel with powdered sugar so that the dough does not stick. Then we turn the cake over on it so that the curd layer is at the top.
Now we wrap the cake with the curd filling inside.
Leave the rolled roll to cool completely.
Pour the cooled curd roll with chocolate melted in a water bath and sprinkle with chopped kernels of nuts.
