Dumplings from Multi-Colored Dough with Curd Filling

Ingredients

For the dough:

  • Flour – 450 g (3.5 cups with a capacity of 200 ml)
  • Beets – 1 pc. (70 ml juice)
  • Carrots – 1 pc. (70 ml juice)
  • Large cucumber – 1 pc. or 2 small (70 ml juice)
  • Yolks – 3 pcs.
  • Salt – 0.5 teaspoon

For filling:

  • Cottage cheese – 500 g
  • Salt – 1-2 pinches
  • Parsley – a couple of sprigs
  • Sour cream – 3-4 tbsp

Directions

  1. We will use only natural dyes to color the dough. We make carrot and beetroot juice for the first and second types of dough – add instead of water when kneading. For juice, simply grate vegetables on a fine grater and squeeze 70 ml of juice each.
  2. The third dough will be painted green using cucumber peel (you can use spinach juice). Remove the peel of the cucumber, punch through it with a blender and squeeze 70 ml of juice.
  3. Each time, for each portion of the dough, we use the same amount of flour (150 g ≈ 1 glass with a capacity of 250 ml), 1 yolk and 1 pinch of salt.
  4. Knead the elastic dough.
    We give the finished dough a little rest in the bag. Knead again after 10 minutes.
  5. Then we roll out each piece of colored dough into a rectangular blank (long and narrow rectangle). The dough is great and a pleasure to work with.
  6. Lightly grease the blanks with water so that the layers of dough stick better, and lay them on top of each other. Then we fold the dough into a tight, tight roll – this is important, otherwise there will be a hole in the middle of the circle.
  7. We cut the resulting roll into “washers”.
  8. Roll the “washers” into circles for dumplings.
  9. You can use any filling, I have today – salted cottage cheese and herbs.
  10. We form (sculpt) dumplings.
  11. We boil in boiling salted water: as soon as the dumplings surfaced, we cook for literally another minute. Even ready-made dumplings remain bright after boiling.
  12. Serve with sour cream.
