Eggplant Rolls with Cheese Filling

Delicious eggplant appetizer with cheese and garlic. The recipe for eggplant rolls with cheese filling is simple and quick.

Ingredients

  • Eggplant – 4 pcs.
  • Hard cheese – 100 g
  • Garlic – 3 cloves
  • Sunflower oil – how much will it take
  • Salt to taste
  • Mayonnaise – to taste
  • Greens (optional) – for decoration

Directions

  1. Wash the eggplant and cut into 3-4 mm thick plates.
  2. Place the eggplant in a bowl and sprinkle with salt. Leave for 10-15 minutes to let the eggplant juice and bitterness comes out of them.
  3. The eggplants let the juice go. Drain off excess liquid and rinse the eggplant with cold water to remove the salt.
  4. Pour over the eggplants with vegetable oil.
  5. Put the eggplants in a preheated skillet and fry on both sides for 2 minutes.
  6. Prepare the ingredients for the eggplant rolls. Peel and wash the garlic.
  7. Grate hard cheese on a fine grater.
  8. Pour the cheese into a bowl. Squeeze out the garlic with a garlic press or rub on a fine grater. Add more garlic if you like it spicier.
  9. Add mayonnaise and mix well. The filling for the rolls is ready.
  10. Take a strip of eggplant and spread the filling over the edge.
  11. Wrap in a roll. Do this for all fried eggplants.
  12. Eggplant rolls with cheese and garlic are ready!
