Instructions

  1. Turn on the oven to heat up to 180 degrees. Line a baking sheet with parchment paper. Use a sharp knife to cut off the tops of the buns and remove the crumb.

  2. Place the buns on a baking sheet and place in the oven for about 5 minutes to dry slightly, harden and not soak when you add the filling. In the meantime, prepare the filling. Peel the mushrooms. Cut the mushrooms and cheese into small cubes. Add a little salt and ground black pepper to taste and mix well.
  3. Without turning off the oven, remove the baking sheet with dried buns. Fill each wedge with the cheese and mushroom mixture, backing about 1 cm from the edge of each bun (you can tamp the filling slightly). Break an egg into each bun, being careful not to damage the yolks.

  4. Send the mushroom, cheese, and egg buns to the oven and bake for about 20 minutes. About 5 minutes before the end of cooking, place the cut tops of the buns on a baking sheet so that they also warm up and lightly brown.

Garnish the scrambled eggs in buns with a sprig of herbs if desired and serve.
Enjoy your meal!
