  • Eggs – 3 pcs.
  • Champignon mushrooms – 75 g
  • Parmesan cheese – 20 g
  • Green onion – several feathers
  • Sunflower oil – 0.5 tbsp
  • Salt to taste
  • Ground black pepper – to taste

  1. Remove the peel from the champignon caps, clean off the dirt from the legs. Cut the mushrooms into small cubes. Heat some sunflower oil in a skillet and fry the mushrooms over high heat for about 2-3 minutes.
  2. Grate the Parmesan cheese on a fine grater. Rinse green onions and chop finely. Preheat the oven to 220 degrees.

  3. Divide the eggs into whites and yolks. Pour the whites into a bowl, and place the yolks either in different containers or on one plate, but so that they do not touch. Try not to damage the film of the yolks, they should be intact. Pour a pinch of salt into the whites and beat until firm peaks.
  4. Add mushrooms, green onions, and black pepper. Gently use a spatula to add additives to the protein mass to keep the mass fluffy.
  5. Cover the baking sheet with a silicone mat. Put the mass on it in the form of “nests” with recesses in the center. Place the baking sheet in the oven and bake the protein clouds at 220 degrees for 3 minutes.

  6. Remove the baking sheet from the oven and place over the yolk in the depression. Place the baking sheet in the oven again and bake the Orsini eggs for another 2 minutes. The yolk should be covered with a film, but remain liquid inside.
  7. Scrambled eggs in the clouds are ready. Gently arrange the Orsini eggs with mushrooms and cheese on plates and serve immediately. Enjoy your meal!
