Grilled Pumpkin Kebab

Pumpkin kebabs can be cooked over an open fire or on an electric grill.

Ingredients

  • Pumpkin (peeled and seedless and cut into 2.5 cm cubes) – 1 kg
  • Butter (melted) – 3 tbsp
  • Curry powder – 1 teaspoon
  • Salt – 1/4 teaspoon.

Directions

  1. Turn on the oven to preheat to 230 degrees. Put the chopped pumpkin on a lightly oiled baking sheet. In a small bowl, combine melted butter, curry powder and salt, stir well and pour over the pumpkin in a baking sheet and stir.
  2. Place the baking sheet in the preheated oven and bake the pumpkin, uncovered, until soft and slightly brown, for about 20-25 minutes, stirring occasionally. Remove the finished pumpkin from the oven and leave the baking sheet on the wire rack until completely cooled.
  3. String pumpkin cubes onto metal or wooden skewers. Grill the pumpkin over medium heat for about 3-5 minutes on each side.
