Ingredients

  • 100 g butter, room temperature
  • 500 g cheese, (hand cheese)
  • 3 tablespoon mustard, medium hot
  • 4 egg yolks
  • 2 large onions
  • 1 tablespoon caraway seeds
  • 1 tablespoon paprika powder
  • salt and pepper
  • 1 pinch (s) cayenne pepper
  • 1 bunch chives

Instructions

  1. Put the butter, which is at room temperature, in a bowl and beat until frothy with the whisk. Cut the hand cheese into fine cubes and then mash it with a fork and add to the butter together with the mustard and egg yolks. Cut the onions into very fine cubes and add to the butter and stir everything well. Then season the hand cheese tartare with the salt, pepper and cayenne pepper to taste. Sprinkle with the chives, which are cut into fine rolls. Serve with a strong, fresh farmer`s bread.
