Ingredients

  • 1 can jackfruit, green, 565 g
  • 1 onion (s)
  • 1 tablespoon olive oil
  • 2 tablespoon ketchup
  • 2 tablespoon barbecue sauce
  • 2 tablespoons vinegar, for me apple cider vinegar
  • 1 tablespoon soy sauce
  • 0.5 teaspoon ½ garlic, ground
  • 0.5 teaspoon ½ pepper, ground
  • 100 ml water

  • Lemon juice
  • pepper
  • 1 tomato (s)
  • 0.33 cucumber (s)
  • 100 g rocket
  • 100 g red cabbae
  • 0.33 bell pepper (s)

Instructions

  1. Drain the jackfruit pieces from the can, rinse well under running water and pat dry with kitchen paper. Cut the onion into small pieces, sauté with 1 tablespoon of olive oil in the pan until translucent, add the jackfruit pieces and stir-fry for five minutes. Add ketchup, barbecue sauce, soy sauce, vinegar, garlic and water, stir well and let everything simmer for about 20 minutes over medium heat. Stir in between.
  2. Use a wooden trowel to crush the cooked jackfruit pieces in the pan into fibers. Put in a baking dish and cook in the oven at 180 degrees top / bottom heat for another 10-15 minutes. Then cut the pieces into fine fibers again with a fork.
  3. Then put the burger together as follows:
  4. Cut the vegetables (tomato, cucumber, red cabbage, bell pepper) into slices. Halve the avocado, remove the stone, remove the pulp with a spoon. Mash the avocado pulp with a little lemon juice and pepper to a fine cream.
  5. Halve the rolls and toast briefly in the hot pan. Spread some avocado cream on the lower half, sprinkle rocket and cucumber pieces on top, pour vegan pulled pork on top, put tomatoes, red cabbage, paprika and the second half of the bread roll on top. Fix the rolls with a wooden skewer and enjoy.
  6. Note: Jackfruit is a tropical fruit and when ripe it tastes exotic like pineapple-banana. The unripe, green fruits are harvested for vegan meat substitutes. The unripe, fibrous pulp is tasteless, but can be marinated and processed further as vegan pulled pork. The jackfruit burgers made from it taste sensational.
