Ingredients
- 900 g sour cherries, (without cherry stones)
- 125 ml red wine
- 1 squirt lemon juice
- 1 kg preserving sugar, :
- 1 bunch lemon balm, to taste

- Mix the prepared cherries with the lemon juice in a large, tall saucepan and puree. Stir in red wine. Add the preserving sugar. Bring everything to the boil while stirring. Let it simmer for 4 minutes from the boil. If desired, stir in the finely chopped lemon balm after cooking for 3 minutes.
