Lviv Cheesecake

Lviv cheesecake is the most delicious cottage cheese dessert. Prepared without flour.

Ingredients

For the basics:

  • Cottage cheese – 500 g
  • Sugar – 150 g
  • Eggs – 4 pcs.
  • Butter – 80 g
  • Starch – 1 tbsp
  • Lemon – 1 pc.
  • Salt – 0.5 teaspoon.
  • Vanilla sugar – 1 teaspoon

For Glaze

  • Butter – 20 g
  • Sour cream – 3 tbsp
  • Powdered sugar – 2 tbsp
  • Cocoa powder – 2 tbsp

Directions

  1. Grind the yolks with sugar and vanilla sugar.
  2. Add softened butter.
  3. Send cottage cheese there. (Curd should not be wet. If the curd is wet, weigh it.)
  4. Add starch, lemon zest, and juice from half a lemon.
  5. Stir into a homogeneous mass.
  6. Beat the whites with salt until foamy. Begin to beat at minimum speed, gradually bringing it to the maximum. Stir the proteins into the curd mixture with a spatula.
  7. Line the baking sheet with parchment. Pour out the dough, distribute evenly over the baking dish (baking dish – 21 cm in diameter). Bake for 40 minutes at 180 degrees.
  8. Cool the prepared cheesecake completely. Carefully separate the cheesecake from the bottom with a spatula. Turn over onto your hand and place on a plate. Pull it out gently, it is soft, it can break easily.
  9. Melt butter in a saucepan or heavy-bottomed saucepan, add sour cream, powdered sugar, and cocoa. Stir constantly until smooth. When the mixture is smooth, turn off the heat. Cool slightly.
  10. Apply warm glaze on top and on the sides of the cheesecake.
  11. Refrigerate for 8 hours. The cheesecake must definitely stand for so long, during this time it will become denser and acquire an unforgettable taste.
  12. Lviv cheesecake is ready! Serve it with coffee and have fun!
