Lviv Cabbage Rolls on Dried Fruits

A very unusual recipe for stuffed cabbage. Dry barley grits filling. During the cooking time, each grain has time to swell, but the filling does not turn into sticky porridge, but becomes crumbly and fragrant, because cabbage rolls are stewed on a pillow of dried fruits.

Ingredients

  • Barley groats – 500 g
  • Bulb onions – 2 pcs.
  • Carrots – 1 pc.
  • Semi-smoked bacon (podcherevok) – 200 g
  • White cabbage – 1 medium head
  • Dried fruits (apples, pears, cherries, prunes) – a handful
  • Salt
  • Ground black pepper
  • Vegetable oil – 3 tbsp

Directions

  1. Products for making cabbage rolls in Lviv.
  2. Prepare cabbage for cabbage rolls. Steam the cabbage, remove the leaves, cut off the thickenings.
  3. Prepare stuffing for stuffed cabbage rolls. Rinse the barley and discard on a sieve to drain the water. Cut the onion into quarters and fry with grated carrots in vegetable oil. Mix with cereals and add salt and pepper.
  4. Cut the bacon into cubes. Put the filling on each cabbage leaf. In the middle – a block of bacon and roll the cabbage roll as usual. Put well washed dried fruits on the bottom of a thick-walled saucepan. Put stuffed cabbage on them. Pour hot water to the top. Simmer cabbage rolls in the oven for 2-2.5 hours at a temperature of 175 degrees
  5. Sour cream can be served with cabbage rolls in Lviv.
