Ingredients

  • 200 g butter
  • 150 grams sugar
  • 200 g flour, type 550
  • 3 egg (s)
  • 1 pinch vanilla
  • 0.5 teaspoon ½ ginger, fresh (grated)
  • 0.5 teaspoon ½ lemon (s), fresh (grated)
  • 3 pear (s)
  • 2 tablespoon sugar, brown
  • 2 teaspoons baking soda

Instructions

  1. Mix the butter, approx. 175 g, with the sugar until frothy. Sifted flour with baking powder, as well as the eggs, vanilla, lemon zest, and ginger zest. Work everything into a smooth dough until it bubbles.
  2. Grease a springform pan 18 cm, 20 cm or 22 cm in diameter or line it with baking paper. Pour the batter into the baking pan and then smooth the surface.
  3. Peel the pears, remove the core and cut into fine strips. Spread these pear strips on the surface of the dough in a fan shape. Sprinkle with the brown sugar, distribute the remaining butter as butter flakes on the surface and bake for approx. 60 minutes at approx. 160 degrees / Celsius in the preheated oven until golden brown.
  4. At the end of the baking time, use a knitting needle in the center of the cake to check whether the cake is baked through.
