Pork Stewed with Canned Beans in Tomato Sauce

Meat with beans in tomato sauce is an appetizing and hearty Mexican-style dish. Pork goes well with beans, a mixture of peppers adds spice, and tomato sauce makes the taste and color of the dish rich and bright. With canned beans, the dish cooks faster. In addition, everything is cooked in one pan, which is very convenient.

Servings: 3

Ingredients

  • Pork (pulp) – 250 g
  • Canned beans in tomato – 400 g (1 can)
  • Onions – 150 g (2 pcs.)
  • Carrots – 150 g (1 pc.)
  • Garlic – 2-3 cloves
  • Salt to taste
  • Ground pepper (a mixture of peppers) – 1/3 teaspoon (to taste)
  • Vegetable oil – 30 ml (2 tablespoons)

Directions

  1. Peel and wash onions and carrots. Cut the onion into small cubes, grate the carrots on a coarse grater.
  2. In a frying pan preheated with vegetable oil, fry the onions and carrots over low heat for 7-10 minutes, until soft and light golden brown.
  3. Cut the pork into small cubes.
  4. Add meat to the pan to vegetables.
  5. Peel the garlic, chop it with a knife and add it to the pan.
  6. Mix everything and fry over high heat, stirring occasionally, for about 5 minutes.
  7. Then add water (130 ml).
  8. Simmer the contents of the pan under the lid over low heat for about 30 minutes, until the meat is tender. By the end of cooking, almost all of the water should have evaporated. If there is a lot of liquid left in the pan, turn up the heat and cook for another 2-3 minutes without a lid, until the liquid evaporates.
  9. After that, add the beans along with the sauce, a mixture of peppers, and salt to the pan. We mix.
  10. Close the lid and simmer for 2-3 minutes on low heat.
  11. The pork stew with canned beans is ready. This is a great, complete, delicious lunch or dinner that requires little hassle.
