Ingredients

  • 1 pack rabbits (domestic rabbits), frozen
  • 1 liter buttermilk
  • 0.5 liter ½ broth
  • 1 can apple - red cabbage
  • 1 kg potato (s)
  • 1 cup cream
  • 1 dash white, dry wine
  • possibly sauce thickener

Instructions

  1. Place the thawed and cleaned house rabbit parts in a liter of buttermilk for one night (gives this inimitable taste!), Then do not rinse the parts and place them in a roaster as they are. Preheat the oven to 200 degrees beforehand.
  2. Place the roaster with about half a liter of stock (I use vegetable stock) in the oven for about 20 to 40 minutes.
  3. Meanwhile prepare the potatoes and the red cabbage. As an alternative to the potatoes, bread or bacon dumplings are also possible.
  4. After braising in the oven, put the stock made from the broth and meat juice in a saucepan and thicken a sauce: dTake a mug of sweet cream and a dash of dry white wine - if necessary, thicken the sauce with a sauce thickener and season to taste.
  5. A delicious dish for the whole season.
