Ingredients

  • 1 kg beef fillet (s), whole
  • 1 onion (s), red
  • 1 clove garlic
  • 4 spring onion (s)
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 250 ml olive oil
  • salt and pepper

Instructions

  1. Preheat the oven to 90 ° C convection or 110 ° C top / bottom heat,
  2. Halve the beef fillet, place on a baking sheet, season well on all sides with salt and pepper;
  3. Halve the onion and garlic without peeling them, clean the spring onions, wash them if necessary and cut them into large pieces. Spread the vegetables around the meat, place the herb sprigs on the meat and pour the olive oil over everything. Place in the preheated oven for 40 minutes.
  4. Heat the pan and sear the meat on all sides when the oven is over.
  5. Cut into slices just before serving.
  6. When slicing, remember: this is supposed to be steaks and not a carpaccio.
  7. During my preparation I had 2 kg of meat for 6 people; left it in the oven for a bit longer than an hour and doubled the other ingredients.
  8. However, you definitely don`t need half a liter of olive oil - the amount given here is completely sufficient.
