Salmon Meatballs

Unusually tender red fish meatballs in a crispy breading … Very tasty!

How to cook fish meatballs:
Finely chop the salmon fillet.
Peel, wash and chop the onion.
Heat 1 tablespoon. a spoonful of vegetable oil and fry the onion over medium heat, stirring occasionally, until golden brown (5-7 minutes).
Peel, wash and grate the potatoes.
Mix fish, onion and potatoes.
Grate the lemon zest.
Chop the herbs finely.
Add zest, herbs, egg, salt and pepper to the minced meat. To stir thoroughly.Leave in the refrigerator for 30 minutes.
Pour breadcrumbs into a plate. Roll the minced meat into balls the size of a walnut and roll the meatballs in breadcrumbs. Let stand for 5 minutes.
In a cauldron (or in a frying pan with high sides) heat up vegetable oil (enough for deep fat). Fry the meatballs in boiling oil for 5-7 minutes until golden brown.
Put the finished meatballs on a napkin to absorb excess fat.
The fish meatballs are ready.
