Ingredients

  • g 1,000 spelled flour, (whole rain)
  • 150 g spelled flour, 630
  • 1 cube yeast, fresh
  • 500 ml beer, (black beer)
  • 100 ml water
  • 1 pinch cardamom
  • 100 g pumpkin seeds
  • 1 tablespoon salt

Instructions

  1. Dissolve the yeast in lukewarm water. Mix both flours in a bowl, add salt and cardamom. Add the beer at room temperature in 2 steps (foams). Add the dissolved yeast and process everything into a harmonious dough. Finally, work in the pumpkin seeds. If the dough is still too sticky, just add some spelled flour.
  2. Dough approx. 30-40min. let go.
  3. After rising for the first time, divide the dough into 2 pieces. Shape each loaf well and let rise in the proofing basket for another 20-30 minutes.
  4. Preheat the oven to 250 ° C top and bottom heat.
  5. The loaves of bread can be baked freely and without a mold. Simply on baking paper.
