Ingredients

  • 1 large zucchini
  • 1 packet feta cheese
  • 1 packet cheese for gratin
  • 2 large tomato (s)
  • olive oil
  • Herbs, Italian
  • salt and pepper
  • possibly fresh basil

Instructions

  1. Finely dice the tomatoes and feta, place in a bowl and season with the herbs.
  2. Halve the zucchini lengthways and scoop out with a spoon so that there is still about a centimeter from the edge. Brush the hollowed out zucchini halves with a little olive oil and add a pinch of salt. Then pour the filling evenly into the zucchini with a spoon and cover with the grated cheese for gratin.
  3. A deep baking sheet or casserole dish are ideal for preparation. Pour some olive oil into the chosen container and bake the zucchini halves at 160 ° C for approx. 30 minutes.
  4. (The zucchini still has a bit of bite. If you don`t like that, you can briefly blanch the zucchini halves before filling). At the end, if necessary, you can activate the grill function of the oven for a short time until the desired degree of browning is achieved.
  5. This goes well with rice and a tomato sauce.
