Stuffed Zucchini in Tomato Sauce

You can make a lot of delicious dishes from zucchini. One of them is stuffed zucchini stewed in tomato sauce. The recipe is very simple and affordable.

Ingredients

  • Zucchini – 3 pcs.
  • Minced chicken – 250 g
  • Semi-cooked rice – 125 g
  • Onions – 1 pc.
  • Garlic – 1 clove
  • Tomato – 300 g
  • Fresh mint – 2 leaves
  • Butter – 30 g
  • Sunflower oil
  • Cinnamon – optional
  • Black pepper – to taste
  • Salt to taste
  • Sugar to taste
  • Cumin – to taste

Directions

  1. We prepare the ingredients for stuffed zucchini. To heat the dish, you will need a heat-resistant container with a thick bottom. Pour vegetable oil into it and combine with butter. We put on fire.
  2. First of all, prepare the tomato sauce. To do this, grind the tomatoes in a blender or take ready-made tomato paste or juice.
  3. Salt (1 teaspoon), add sugar (1 teaspoon), black pepper, cinnamon and cumin. Stir and leave to infuse the sauce.
  4. Put chopped onion and garlic, cut into slices in the heated oil. Onions do not need to be fried; they should soften and begin to languish.
  5. In zucchini we cut off the edges on both sides and cut out the insides with a vegetable peeler, leaving the pulp only at the edges.
  6. Grind the zucchini pulp and divide into 2 parts. We send half to tomato sauce, and mix the other half with minced meat.
  7. Add salt, black pepper and a little rice to the minced meat, boiled until half cooked.
  8. Add the tomato pulp to the onion.
  9. Mix and add fresh mint. We leave to languish.
  10. We stuff the zucchini with a teaspoon.
  11. Pour a little boiling water into the sauce, mix and bring to taste. Put the zucchini in the sauce so that they are half covered with liquid. Cooking stuffed zucchini in tomato sauce for 40 minutes. During this time, the zucchini must be turned over once.
  12. Cut the stuffed zucchini into slices and serve with sour cream. Bon appetit!
