Stuffed Zucchini with Tahini Sauce

Recipe for making zucchini stuffed with minced meat, stewed in tahini sauce with lemon juice and chicken broth.

Ingredients

  • Small zucchini – 1 Kilogram
  • Minced meat – To taste
  • Tahini – 1/2 Glass
  • Salt – To taste
  • Chicken broth cubes – 2 Pieces
  • Frying Oil – To taste

Directions

  1. Prepare minced meat according to your taste and let it cool.
  2. Using a special knife, cut a deep hole along each zucchini and remove the pulp. You can set the pulp aside and use it to prepare other dishes.
  3. Heat oil in a deep frying pan. Fill the zucchini with the minced meat.
  4. Place the zucchini in a skillet and fry until golden brown.Meanwhile, prepare the sauce. In a bowl, mix the tahini and lemon juice well.
  5. Season with salt and add a little water, about 1-2 glasses. Keep in mind that almost half of the liquid will evaporate during cooking, but at the same time, do not make the sauce too thin.
  6. Pour the tahini over the zucchini and add the chicken stock cubes. Bring to a boil over low heat and simmer for 15-20 minutes, until the sauce thickens and nearly halves in volume. You do not need to cover the pan with a lid. Serve a platter with pita bread.
