Ingredients

  • 250 g nuts your choice (e.. almonds and Brazil nuts), chopped and / or donated
  • 175 g coconut chips, unroasted
  • 200 g oat flakes, crunchy
  • 2 tablespoon chia seeds
  • 1 teaspoon cinnamon or cocoa
  • 100 g coconut oil, melted

To serve:

  • yogurt or milk, possibly lactose-free or vegan
  • fruit your choice (e.g. blueberries)

Instructions

  1. Preheat the oven to 120 ° C top / bottom heat and line a baking sheet with baking paper.
  2. First, roughly chop the nuts, if they are not already chopped or pounded, and mix with the coconut chips, oat flakes, chia seeds and cinnamon or cocoa. Then melt the coconut oil and stir into the coconut-nut mixture. Spread the whole thing on the baking sheet lined with baking paper.
  3. Bake in the preheated oven for about 15-20 minutes until golden brown on the middle rack. Turn it a few times in between. As soon as the granola is golden brown and crispy, take it out of the oven and let it cool completely. Fill into a large glass with a lid or into a muesli can / muesli glass.
  4. For breakfast or as a snack in between, put 3 tablespoons of coconut granola in a cereal bowl, mix with yogurt or milk and serve with fruit of your choice.
  5. Tip: If you want, you can replace half of the nuts with cocoa nibs to get a chocolatey granola.
