Ingredients
- 250 g butter
- 2 teaspoons honey, (blossom honey)
- some elderflower umbels

- Plucking the delicate flowers from the umbels is very easy with a fork.
- Beat the butter at room temperature with the mixer until creamy, add the honey and the flowers and fold in with a silicone scraper. Roll the butter in FH foil or spread it in silicone muffin molds and let it set in the refrigerator.
- Tastes very good on scones or on a slice of yeast plait.
- I also make this sweet butter with other fragrant flowers e.g. thyme blossoms, rose blossoms, dead nettle blossoms (very fine).
