Yeast Pies with Apples

Delicious and airy pastries. Pies, soft as down, are made from yeast dough without dough. Pies do not stale for a long time. Any filling can be used, but apple filling cooked in the microwave oven is especially tasty in pies.

Servings: 15

Cook: 2 hours


For the dough:

  • Milk – 250 ml
  • Butter – 75 g
  • Vegetable oil – 35 ml
  • Egg (small) – 1 pc.
  • Flour / s – 450-500 g (3 cups with a capacity of 250 ml)
  • Dry yeast – 8 g
  • or pressed yeast – 25 g
  • Sugar – 50 g (1/4 cup)
  • Salt – 1/2 teaspoon

For filling:

  • Apples (peeled) – 300 g
  • Sugar – 2 tbsp
  • Rum – 1 tbsp
  • Starch – 1 teaspoon
  • Vanillin – on the tip of a knife
  • Ground cinnamon – optional (I did not add)

To grease the pies:

  • Yolk – 1 pc.


  1. Pour warm milk into a deep bowl and dissolve the yeast.
  2. In a separate container, combine the egg, sugar and salt, beat with a whisk.
  3. Add the egg mixture to the milk with yeast, mix and let stand for 5 minutes.
  4. Sift the flour and add portions to the liquid ingredients of the dough.
  5. Mix everything thoroughly after adding each portion of flour so that the dough becomes homogeneous.
  6. Melt the butter and cool until slightly warm. Pour vegetable and melted butter into the dough.
  7. Knead a soft, tender and slightly sticky dough. You can add a little flour if necessary.
  8. We place the dough in a food plastic bag and leave in a warm place for 1 hour.
  9. Cooking the apple filling. To do this, wash the apples, remove the seed boxes and cut them into small cubes. Add 2 tablespoon. tablespoons of sugar and mix.
    Put the apples with sugar in a special dish for the microwave oven, cover with a lid and place in the microwave for 3-4 minutes at a power of 500 watts.
  10. Then add starch, vanillin and rum to the apples. Stir and cool to room temperature. (I ended up with 300 grams of filling.)
  11. As the time elapsed, the dough rose and increased in size.
  12. I got 900 grams of dough, which I divided into 15 equal pieces of 60 grams. We round off the pieces of dough and cover with a towel so as not to weather.
  13. Now we form the pies. To do this, take one piece of dough, roll it into a round cake. Put 1 heaped teaspoon (20 grams) of apple filling in the center of the cake.
  14. We carefully pinch the dough over the filling: first, pinch the pie in the middle.
  15. Then we pinch the edges.
  16. Turn the pie over with the seam down. This is how we form all 15 pies.
  17. Cover the baking sheet with baking paper and spread the pies about 2 cm apart. Cover with a towel and let stand for 20-30 minutes.
    15 minutes before the end of the proofing, turn on the oven to heat up to 190 degrees.
  18. After the time has elapsed, combine the egg yolk with 1 teaspoon of water, shake and gently grease the top of the pies with yolk.
    We bake the pies in a preheated oven until golden brown, about 17-20 minutes at a temperature of 190 degrees.
  19. Yeast pies with apples are ready. Let them cool for 5 minutes.
  20. We transfer the pies to a dish and serve.
  21. The apple filling is juicy, but does not come out of the pie.
