For the dough:

  • 2 cup flour
  • 12 tablespoon butter, cold
  • 4 tablespoon water, ice cold
  • 1 ½ teaspoon salt
  • 2 teaspoons sugar

For the filling:

  • 2 large apples, or 3 small ones
  • 0.25 ¼ cup sugar
  • 0.25 ¼ cup sugar, brown
  • 1 teaspoon cinnamon
  • 0.5 teaspoon ½ nutmeg
  • 1 pinch (s) salt
  • 1 tablespoon flour
  • 1 teaspoon vanilla extract

  1. Dough:
  2. Cut the butter into small cubes. Pour into a mixing bowl and add the flour, then use a fork to mash the butter with the flour. Add salt and sugar, then the ice water and knead well. If the dough is still too dry, add ice water if necessary. Knead everything into a dough, wrap in cling film and put in the fridge for 30 minutes.
  3. Filling:
  4. Peel the apples and cut into small pieces. Add sugar, brown sugar, nutmeg, salt and vanilla extract and mix together.
  5. Roll out about 3/4 of the dough thinly with the rolling pin. Use a small bowl slightly larger than the muffin tin to cut out circles. Place these in the muffin tin and prick the bottom a few times with a fork. Pour the filling into the mold.
  6. Roll out the remaining dough and cut into strips. Lay the strips on top of the filling in a grid.
  7. Bake at 180 degrees for about 40 minutes until they are nice and golden brown.
  8. They taste best warm with a delicious vanilla sauce.
