Yeast Pie with Apples

Delicious, soft and beautiful pie in the form of a wicker ring with apple filling! The yeast dough, from which this apple pie is prepared, is popularly called “drowned man”, as it is fermented in cold water! A very unusual technique considering the yeast loves warmth. I don’t know how the presence of the dough in water affects the dough itself, but the products made from it are amazing and the baked goods do not stale for a long time!

Servings: 4

Ingredients

For the dough:

  • Flour – 500 g
  • Milk – 250 ml
  • Butter – 75 g
  • Egg – 1 pc.
  • Sugar – 5.5 tbsp
  • Dry yeast – 10 g
  • Salt – 1/3 teaspoon

For filling:

  • Apples – 500 g
  • Butter – 25 g
  • Sugar – 1 tbsp
  • Ground cinnamon – 0.5 teaspoon

For decoration (optional):

  • Powdered sugar – 0.5 tbsp

Directions

  1. First, prepare the apple filling. Peel and core the apples and cut the flesh into cubes or small, freeform slices.
  2. Melt the butter in a skillet. Transfer the apple slices to a frying pan, add sugar and ground cinnamon.
  3. Sauté the apples for 3 minutes over high heat until soft. Stir the apples frequently during roasting.
  4. Transfer the apples from the skillet to a bowl and set aside.
  5. Now start making the dough. Melt the butter and cool.
    Pour lukewarm milk into a bowl. Pour sugar (1.5 tablespoons) and dry yeast into milk. Stir and let sit for 10 minutes.
  6. Add the egg, the remaining sugar, salt, melted and cooled butter and a couple of tablespoons of flour from the total volume to the foamed dough.
  7. Stir the combined ingredients.
  8. Then, without stopping stirring the mass, add the sifted flour in parts.
  9. Knead the dough for about 5 minutes with a food processor (with the hook attachment), or for about 10 minutes with your hands, until the dough is lumped.
  10. Pour cold water directly from the tap into a deep saucepan or large bowl.
  11. Shape the dough into a ball and dip it into the water.
  12. Leave the yeast dough in cold water for 20 to 40 minutes. When the dough comes up, it is ready for further manipulation. It took me 40 minutes.
  13. Remove the dough from the water, it will be sticky. Sprinkle the table with flour, put the dough and sprinkle it with flour as well.
  14. Pound the dough a little, just to get rid of the stickiness.
  15. Then roll out the dough into a rectangular layer about 1 cm thick.
  16. Put the apple filling on a layer of dough (drain the liquid first), spreading it over the entire surface, but not reaching the edges a little.
  17. Roll the thick roll along the wide side.
  18. Transfer the roll to a baking sheet covered with baking parchment. Cut the roll into two parts lengthwise, on one side without cutting to the end.
  19. Now twist the halves of the roll together.
  20. Form the ring carefully. The pieces of apple filling that will fall out during this entire procedure can be carefully put back into the dough.
    Leave the future apple pie made from yeast dough for 10-20 minutes in a warm place.
  21. Bake the yeast pie with apples in the oven, preheated to 180 degrees, for 30-35 minutes, until a beautiful golden brown crust.
  22. Cool the apple pie completely and sprinkle with powdered sugar if desired before serving.
  23. Yeast apple pie is soft, delicious and aromatic. Suitable for both hot drinks and cold ones. It’s delicious with milk!
