Zucchini Rolls with Cucumber-Cheese Filling

Zucchini rolls with cucumber-cheese filling are both fresh and nutritious, and just a delicious snack that is suitable for a festive or everyday table. Making rolls is simple and easy, for the filling we use a mixture of grated cucumbers and cream cheese. And, of course, where without herbs and garlic!

Ingredients

  • Young zucchini – 600 g
  • Fresh cucumbers – 250 g
  • Cream cheese – 150 g
  • Wheat flour – 100 g
  • Egg – 1 pc.
  • Fresh parsley – 20 g
  • Garlic – 3 cloves
  • Vegetable oil – 70 ml
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all products according to the list. Choose young zucchini, with a thin skin and small soft seeds.
  2. Cut the zucchini into slices as thin as possible.
  3. Roll each zucchini plate in flour on both sides.
  4. In a separate bowl, shake the egg and 2 tbsp of water. Dip the zucchini in the egg. Do the same with all sliced ​​courgettes.
  5. Preheat a frying pan with vegetable oil, add a batch of zucchini. Fry the courgettes for 2 minutes on each side.
  6. Peel the garlic and pass through a press. Rinse the parsley, dry and chop as small as possible.
  7. Cool all fried zucchini slightly.
  8. Prepare the filling for the rolls. To do this, grate the cucumbers in a bowl on a medium grater. If they are too watery, squeeze out the juice.
  9. Add garlic, herbs and cream cheese to the cucumbers. Add salt and black pepper to taste.
  10. Stir all the ingredients well.
  11. Arrange the fried zucchini on a board or table. Put a teaspoon of the prepared filling on the edge of each piece.
  12. Roll up the zucchini. Do this with all zucchini.
  13. Put the finished zucchini rolls with cucumber-cheese filling on a plate and serve.
