Adjika Zucchini with Tomato Paste

Zucchini is a good field for imagination. They have a fairly neutral taste, so you can cook many different dishes from them. Combinations of other vegetables will create the main taste.

Ingredients

  • Zucchini – 1 Kilogram
  • Tomato Paste – 200 Grams
  • Salt – 1
  • Sugar – 100 Grams
  • Vinegar 9% – 50 Milliliters
  • Garlic – 7-8 Cloves
  • Bitter pepper – 0.5 pieces
  • Sunflower oil – 150 Milliliters

Directions

  1. Prepare the required ingredients. Wash and peel the zucchini.
  2. Cut the zucchini into slices. Pass through a fine-grated meat grinder. Cut a pod of hot pepper in half, remove the middle with the seeds and also grind in a meat grinder and put in a separate plate.
  3. Add tomato paste, sugar and salt to a bowl with ground zucchini, mix well.
  4. Pour vegetable oil into a saucepan and heat it. Then pour in the mixture of courgettes with tomato paste, salt and sugar. Simmer for 30 minutes over low heat. Then add ground hot pepper and garlic minced through a press. Simmer for another 10-15 minutes over low heat.
  5. Pour in the vinegar five minutes before the end of cooking.
  6. Adjika zucchini with tomato paste is ready! Let cool and season with your favorite foods.
