Ingredients

  • 1 kg sardines, fresh, Breitling or smelt
  • 120 g flour
  • 6 tablespoon water, cold, up to 8
  • salt
  • Oil, for frying

Instructions

  1. Mix the flour and a pinch of salt with enough water to make a thick dough. Heat enough oil in as deep a pan as possible. Always dip 3 fish into the batter at the same time. Firmly squeeze the caudal fins to create a fan-like shape.
  2. Important: Dip the fish into the batter just before frying it !!!! The fish can of course also be baked individually.
  3. Carefully place the fish in the pan and fry until golden brown and crispy. Do the same for all other fish. Baking time for each layer approx. 3 minutes. Lightly salt cooked fish!
  4. The fish should be eaten immediately after frying. Garnish with a light garlic sauce and lemon wedges. To keep the individual layers warm, place the fish on a grid, cover with kitchen paper and place in the slightly warm oven. Do not close the door. Good Appetite!
