Borscht with White Cabbage, Cauliflower and Beijing Cabbage

I bring to your attention one of the options for delicious homemade borscht. In this recipe, we use three types of cabbage: cauliflower, white cabbage, and Peking cabbage. For the broth, use any part of the chicken. For the rest, we use a traditional set of vegetables, tomato paste, and spices to taste.

Ingredients

  • Chicken wings – 250 g
  • Beets – 100 g
  • White cabbage – 180 g
  • Peking cabbage – 70 g
  • Cauliflower – 70 g
  • Potatoes – 200 g
  • Carrots – 70 g
  • Onions – 70 g
  • Root celery – 50 g
  • Tomato paste – 70 g
  • Vegetable oil – 2 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Water – 2 l

Directions

  1. Prepare all products according to the list. Peel all vegetables.
  2. Cut the potatoes into medium pieces.
  3. Pour the wings in a saucepan with water and bring to a boil. Boil the broth for 30 minutes. Then add potatoes and cook for another 15 minutes.
  4. Grate carrots and celery on a fine or medium grater.
  5. Also, grate the beets on a medium grater. Cut the onions into small cubes.
  6. Cut white and Chinese cabbage into thin strips. Disassemble the cauliflower into small inflorescences or cut.
  7. Heat vegetable oil in a frying pan and add onions, carrots, beets, and celery. Fry vegetables for 3 minutes, stirring occasionally. Add tomato paste to the pan, stir and heat for another 1 minute.
  8. Transfer the dressing from the pan to the saucepan. Add white cabbage and cook for 15 minutes.
  9. Add cauliflower to the pot 5 minutes before the end of cooking. Then add Chinese cabbage. Add salt and black pepper to taste.
  10. Boil the borscht for another 5 minutes and turn off the heat. Let the borscht brew under the lid for 10 minutes.
  11. Pour the finished borscht into plates and serve. You can serve borscht with sour cream, bacon, bread, herbs.
