Chicken Kebab in the Oven (in Kefir Marinade)

A very good way to bake chicken thighs in the oven, in order to end up with meat that is as close as possible to a kebab, namely, a crust on top with small cakes, and inside – tender and juicy. The only thing missing in such a kebab in the oven is the smell of haze. And so, it turns out an excellent barbecue at home in the oven.

Ingredients

  • Chicken thighs (without bones and skin) – 550-600 g
  • Bulb onions – 3 pcs.
  • Garlic – 1-2 cloves
  • Kefir – 150 ml
  • Adjika – 1 tbsp
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Free the chicken thighs from the bones. Make punctures in the meat with a tenderizer or fork so that the marinade better penetrates deep into the chicken fibres.
  2. Cut the chicken thighs into large pieces.
  3. Fold the chicken meat into a container. Add chopped garlic to it.
  4. Cut one onion into half rings.
  5. Put onion half rings with meat. Salt to taste.
  6. Shake the meat and onions with your hands to make the juice stand out.
  7. Add ground pepper to taste, adjika and kefir.
    Mix everything well.
  8. Cut the remaining onion into slices 0.5-0.7 mm thick, like on a shish kebab.
  9. Place the onion slices in a container with chicken meat, keeping their shape as much as possible so that they do not fall apart into separate rings.
    Cover the container with a lid and let the chicken marinate for at least 3-4 hours. Better to leave it in the refrigerator overnight.
  10. Soak wooden skewers in water. In my case, these are bamboo sushi sticks.
    Turn on the oven for maximum heating – I have it 270 degrees.
  11. String the chicken on skewers, alternating with onion slices.
    I pierce each piece of chicken meat twice to keep it well.
  12. Cover the container with a dia slightly smaller than the length of the skewers with foil.
    Place the skewers on the sides of the mould.
  13. You need to bake kebabs at the highest level of the oven – as close as possible to the upper heating element. If there are an overhead grill and convection, then you can turn them on.
    It is necessary to constantly monitor the meat. It will bake very quickly and brown a lot. So that it does not dry out, you need to take out the meat every 3-5 minutes, turn it over and grease it with the released juice.
  14. The baking time can be different – focus on the power of your oven. On average, the total time for baking chicken skewers in the oven is 15-20 minutes.
