Chocolate Cheesecake with White Sauce

This cheesecake is made from mascarpone with the addition of melted chocolate and cane sugar. Served with chocolate cheesecake with white chocolate sauce.

Ingredients

For the cake:

  • Butter (melted) – 50 g
  • Shortbread cookies (crumb) – 200 g

For filling:

  • Black chocolate – 150 g
  • Mascarpone cheese – 700 g
  • Cane sugar – 125 g
  • Corn flour – 2 tbsp
  • Eggs (slightly beaten) – 3 pcs.

For the sauce:

  • High-quality white chocolate – 125 g
  • Fat cream – 125 g
  • Butter – 15 g (1 tablespoon. L.)

Directions

  1. Turn on the oven to preheat to 180 degrees. Cover a round detachable cake tin with a diameter of 23 cm with parchment.
  2. In a large bowl, mix the melted butter with the crumbled cookies, put this mass in the prepared dish, and smooth it with your hands along the bottom and sides, forming a crust with sides. Place the mold in the refrigerator for 5 minutes.
  3. In a small heat-resistant bowl, melt the dark chocolate in a water bath. Stir well and remove from the bath.
  4. In a large bowl, combine mascarpone, sugar, and cornflour until smooth. Then add cooled dark chocolate and beaten eggs. Put this mass in a chilled crust in a mold and place in a preheated oven. Bake the chocolate cheesecake for about 50-60 minutes. Then turn off the oven, slightly open the door and leave the cheesecake in the oven until it cools.
  5. Prepare the sauce. Combine white chocolate and cream in a small heatproof bowl and melt in a water bath. Add the butter, mix well, and serve the cheesecake sauce. Decorate the chocolate cheesecake of your choice.
