Ingredients

  • 250 g flour (whole wheat)
  • 250 g flour (wheat flour type 550)
  • 40 g butter
  • 2 packs yeast (dry yeast), or 1 cube fresh yeast
  • 250 ml milk
  • 1 egg (s)
  • 250 g ham, finely diced
  • 200 g sheep cheese, finely diced
  • 1 egg yolk

Instructions

  1. Mix the flour with the dry yeast in a bowl (if fresh yeast is used, please dissolve in a little lukewarm milk beforehand).
  2. Add the butter, egg and milk and knead everything well. Cover the dough and let it rise for about 40 minutes (it should have roughly doubled).
  3. After it has risen, knead the dough and roll it out to a thickness of 3 - 4 mm.
  4. Cut triangles.
  5. Mix the sheep cheese with the ham.
  6. Put the filling in the middle, roll up from the broad side,
  7. Shape croissants and brush with beaten egg yolk.
  8. Tip:
  9. If the croissant does not work properly, you can also cut rectangles, put the filling in the middle and then fold the rectangle into a triangle.
  10. Let rise on the baking sheet for another 20 minutes, then bake at a good 200 ° C for about 15-20 minutes.
