Ingredients

For the dough:

  • 250 g flour
  • 125 g butter, (soft)
  • 20 g yeast
  • 0.5 teaspoon ½ salt
  • 4 tablespoon sour cream

For the filling:

  • 150 g ham, cooked
  • 50 g ham, raw
  • 2 teaspoons onion (s), (cut into small pieces)
  • 10 g butter
  • 2 teaspoons parsley, (finely chopped)
  • 2 tablespoon sweet cream
  • 1 egg (s), for brushing
  • Caraway or
  • sesame

Instructions

  1. Crumble the butter into the flour - dissolve the yeast in the cold sour cream - stir into the flour pit, add salt, work all the ingredients into a smooth dough. Let go COLD.
  2. Dice the two types of ham into small cubes.
  3. Sauté the finely chopped onion with the parsley in butter. Then mix all the ingredients for the filling with the sweet cream.
  4. The filling must not be too soft!
  5. Roll out the risen dough thinly and cut out the triangles.
  6. Put the filling on the wide side with a coffee spoon, roll up and shape into croissants.
  7. Brush the croissants with the beaten egg and sprinkle with caraway or sesame seeds, depending on your taste.
  8. After filling, the croissants no longer have to go.
  9. Bake at 190 ° -200 ° C on the middle rack for about 20 minutes.
  10. Serve WARM!
