Egg White Glaze

by Editorial Staff

The recipe for egg white glaze is a traditional decoration for Easter cakes and other baked goods. It requires a minimum of ingredients: egg whites, sugar, and water. To add color to the egg white glaze, you can add food coloring, and the flavors such as vanilla, lemon juice, fruit essences will give the egg white glaze a pleasant taste and aroma.

Cooking: 1 hour 25 minutes

Servings: 1

Ingredients

  • Sugar – 1 glass
  • Water – 1 glass
  • Protein – 2 pcs.
  • Flavoring (I have vanillin) – on the tip of a knife
  • Dye (I have blueberry concentrate) – 2-3 teaspoon

Instructions

  1. Pour sugar in water and stir.
  2. Bring the syrup to a boil and simmer over medium heat for 50-60 minutes.
  3. Boil sugar and water until the syrup is sampled on a “softball”. To test, scoop up a little boiling syrup from a saucepan and dip it in ice water. When the syrup has cooled, you can roll a softball out of it with your fingers.
  4. Beat the whites.
  5. Gradually pour the thick syrup in a thin stream into the whipped egg whites.
  6. While whisking the mass, add flavorings to taste and food colors as desired.
  7. Then, stirring with a spatula or spoon, heat the protein glaze in a water bath to 60-65 ° C.
  8. The sugar glaze is ready.

Enjoy your meal!
