Fish Baked with Vegetables in Foil

The fish baked with vegetables according to this recipe will certainly be juicy and tender, and the vegetables will be bright and aromatic!

Ingredients

  • Fillet of cod (or other white fish) – 500 g
  • Zucchini – 1 pc.
  • Bulgarian red pepper – 1 pc.
  • Bulgarian yellow pepper – 1 pc.
  • Bulgarian green pepper – 1 pc.
  • Bulb onions – 1 pc.
  • Garlic – 2 cloves
  • Olive oil – 4 tbsp
  • Dried thyme – to taste
  • Dried rosemary – to taste
  • Dried basil – to taste
  • Dried parsley – to taste
  • Dried dill – to taste
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Cut the zucchini into medium cubes.
  2. Peel the bell peppers (red, yellow, and green to make the dish bright). Cut the pepper into medium squares.
  3. Peel the onion and cut into medium cubes.
  4. Peel the garlic and cut it into slices.
  5. Heat the pan over high heat. Pour olive oil there and put onions, fry until transparent.
  6. Add the peppers, fry for three minutes.
  7. Then zucchini. Fry for another three minutes.
  8. At the very end, add garlic and herbs (I have thyme, rosemary, green basil, parsley, and dill).
  9. We turn on the oven to heat up to 200 degrees. We wash the fish fillet, dry it with a paper towel, cut it into large pieces.
  10. We will bake the fish in foil portions. Grease the foil with a brush with olive oil. We spread the fish fillets in the center, salt, and pepper. Put the fried vegetables on top of the fish so that the fish is completely covered. Add salt and ground pepper.
  11. Cover the fish on the left and right with foil, tuck the top and bottom. We spread the fish and vegetables in foil on a baking sheet. We put it in the oven for 15-20 minutes.
  12. The baked fish with vegetables is ready!
