Fish Zrazy with Melted Cheese

Delicious and very juicy fish zrazy with melted cheese will please even those who do not like fish cutlets. The butter that is added to the minced meat and the processed cheese filling gives the hake cutlets a pleasant taste. Prepare such zrazy – you will not regret it!

Servings: 5


  • Hake fillet – 300 g
  • Processed cheese – 90-100 g
  • Baton – 50 g (1-2 slices)
  • Bulb onions – 100 g (1 pcs.)
  • Butter – 30 g
  • Cream (or fat milk) – 50 ml
  • Egg (medium) – 1 pc.
  • Salt to taste
  • Freshly ground black pepper – to taste
  • Bread crumbs – 70-100 g
  • Vegetable oil (for frying) – 30-45 ml (2-3 tablespoons)

Fillet of any sea fish is suitable for zraz. I took a hake carcass, which I had previously cut into fillets: I removed the ridge, skin and peeled off small bones.
Choose high-quality processed cheese so that it melts well.
Remove the butter from the refrigerator in advance, it should become soft.


  1. Peel and grind the onions in a blender or pass them through a meat grinder.
  2. Cut off the crusts from a slice of bread, break it into small pieces, and fill it with cream (milk).
  3. We pass the fish fillet through a meat grinder or grind in a blender. I passed it through a meat grinder.
  4. Add onion, egg, soaked bread, salt, and pepper.
  5. Mix all ingredients well.
  6. Add softened butter to the minced meat.
  7. Mix well so that the butter is completely “dispersed” over the minced meat and it becomes homogeneous. If the minced meat is thin, add 1 tablespoon. a spoonful of bread crumbs.
  8. Cut the processed cheese into slices about 1 cm thick.
  9. We make a flat cake from minced meat. Put 1 slab of cheese on one side of the cake.
  10. Cover with the other side of the cake and form the shape.
  11. Roll the resulting grain into breadcrumbs. In the same way, we form zrazy from the remaining minced meat and processed cheese.
  12. In a frying pan, heat 30 ml (2 tablespoons) of vegetable oil and spread the zrazy. Fry over medium heat for about 1-2 minutes on each side, until browned. Fry zrazy in batches, adding vegetable oil if necessary.
  13. At the end of cooking, if there is excess liquid in the pan, open the lid, increase the heat and cook without the lid for 3-5 minutes until the liquid has completely evaporated.
  14. Fish zrazy with melted cheese is ready. Enjoy your meal!
