Instructions

  1. Wash the eggplant, remove the ends and cut the rest into slices about 1.5 cm thick.
  2. Heat the olive oil in the pan. Whisk the egg and season with salt and pepper. Then turn the aubergine slices first in it and then in breadcrumbs. Place in the hot pan and fry on both sides until the slices are brown.
  3. Ketchup and rice go well with this.
