Fried Eggs in Tomatoes

A beautiful and effective dish – original scrambled eggs in tomatoes. The preparation of such a bright breakfast is very simple and does not take much time. Fancy scrambled eggs in a tomato “basket” are a great way to start the day!

Ingredients

  • Tomatoes – 2 pcs.
  • Eggs – 2 pcs.
  • Salt – 1/3 teaspoon

    For filing (optional):

  • Fresh dill – 2 branches

Directions

  1. Prepare foods according to the list.
    Instead of dill, you can use any greens you like.
    Unusual scrambled eggs in tomatoes cook very quickly, so you should turn on the oven in advance to warm up to 200 degrees.
  2. Wash the tomatoes, dry and cut off the tops. Carefully, using a teaspoon, remove the pulp from each tomato (we do not need it). Put the resulting tomato “baskets” in a baking dish.
  3. Break one egg into each tomato. Salt.
  4. Bake the tomatoes in an oven preheated to 200 degrees for about 7-10 minutes.
  5. Remove the tomatoes from the oven and leave to cool. Rinse the dill, dry and chop finely with a knife. Sprinkle the chopped herbs in the cooked scrambled eggs in tomatoes and serve.
