Mix the flour, salt and yeast for the dough. Add 60 ml of lukewarm water and 2 tablespoons of oil and use the dough hook of the hand mixer to form a smooth dough. Let rise in a warm place for about 30 minutes.
Finely chop the garlic. Finely dice the onion. Heat the rest of the oil in a pan. Fry the gyros, onion and garlic for 5-6 minutes while turning. Season to taste with salt, pepper and paprika. Take out of the pan and let cool down a bit.
Cut the spring onions into rings. Cut tomatoes into wedges. Knead the dough again. Roll out into a rectangle (25 x 30 cm) on a floured surface and cut in half lengthways. Place the strips side by side on a baking sheet lined with baking paper.
Brush the dough with mustard. Spread the gyros, spring onions and tomatoes on top. Sprinkle with cheese. Bake in the preheated oven (electric stove: 200 ° C, gas stove: level 3) for about 18 minutes. Pluck thyme.
