Halloumi with Lemon Salsa

Ingredients

400 g cheese, halloumi (rilled cheese)
2 tablespoon olive oil

For the sauce:

3 tablespoon olive oil
15 olives, black
1 small Bunch parsley, smooth
2 lemon (s), untreated, the zest it
1 small onion (s), red
2 teaspoons vinegar, white balsamic vinegar

Instructions

Stone the olives and chop them like the parsley and onion. Rub the peel off the lemons.
Mix all ingredients together.
Brush the drained halloumi with oil and grill on each side for 3 to 4 minutes until golden brown.
Serve with the salsa.
