Ingredients

  • 350 g low-fat quark
  • 2 medium egg (s)
  • 5 tablespoon guar gum
  • salt

Instructions

  1. Put the low-fat quark, eggs, guar gum and a pinch of salt in a sufficiently large bowl and mix the ingredients very carefully. Then let it soak for about 15 minutes. The dough should no longer stick badly but be tough. If necessary, add a little flour and let it soak for another 5 minutes. Put on a saucepan with water and bring to a boil. Lightly salt the water. Take the dough out of the bowl and dust it all over with a little guar flour. Then shape small balls out of the dough and make a well with a fork. Pour into the boiling water. As soon as they swim to the surface, skim them. A delicious cream cheese sauce goes well with it.
