Separate 2 of the eggs and add the rest of the egg to the yolks. Whisk the egg yolks with the coconut flour, whey powder, psyllium husks, salt and the sweetener. Then stir in the milk in sips until everything is creamy and free of lumps.
Beat the egg whites until they are really firm. Then fold into the ice cream. Do not stir too vigorously so that it doesn`t collapse and stay nice and fluffy.
Heat some butter in a non-stick pan. Pour the batter into the pan and let it set a little over low to medium heat. As soon as the mass is well enough at the bottom and is therefore a little firmer, quarter and turn. Even if the mass at the top is still quite soft and not everything can really be turned - do not worry, everything will be fine. Let it falter a bit on the other side as well. After a few minutes, cut into large pieces. The pieces can be large or bite-sized, depending on your taste.
Put on a plate and sprinkle with powder xucker if you like.
Tip: If you prepare several servings, you should add the dough to the pan in portions and keep it warm in the oven until everything is cooked.
